  • Peel potatoes and cut into cubes. Put into 4 quart casserole. Add ground beef (uncooked).
  • Then add canned tomatoes, celery, onion, green pepper, and garlic. Add tomato soup and tomato juice and stir well. Add salsa, salt, pepper and chili powder.
  • Bake at 375 degree oven for approximately 1 hr. Remove, and sprinkle cup of Kraft shredded cheese over casserole and return to oven just long enough to melt cheese.

This is a recipe I made up years ago. I had to make dinner for a large group of people one night. I used the things I had on hand in my pantry and refrigerator. It went over very well, and everyone liked it. Now, when we have a pot luck at work, I am always required to make my Spanish Potatoes. I am just glad that so many people enjoy it. Can be made in crock-pot.
