  • CAKE: Preheat oven to 350. Grease and flour 13X9 pan.
  • In large bowl beat eggs, oil and vanilla. Stir in flour, sugar, brown sugar, baking soda, baking powder, salt, vanilla, cinnamon, clove. Mix well.
  • Fold in carrots, walnuts and butterscotch chips until blended. Bake for 40-50 minutes or until toothpick in center comes out clean.
  • FROSTING:
  • In medium saucepan - on low - slowly melt butter, vanilla, white chocolate chips and cream cheese together until smooth. Add powdered sugar and blend.
  • Remove from heat. Fold in coconut & nuts. Pour immediately on slightly or cooled cake.
