  • 1. Prepare rice according to package directions. Keep warm.
  • 2. Saute garlic, ginger, and ground coriander in hot oil in a skillet over high heat 30 seconds. Add flank steak, and stir-fry 5 min. Add bell pepper and next 3 ingredients; stir fry 1 min.
  • 3. Remove from heat, and stir in basil. Serve over warm rice.

Notes

Great for parties too, as lettuce wraps! 2 heads Bibb lettuce 1/2 cup chopped peanuts 2 limes Spoon rice and stir-fry mixture evenly onto lettuce leaves; roll up. Garnish with chopped peanuts and lime wedges, if desired.
