  • Boil the eggs in a large pot for approximately 7 - 10 minutes on medium heat. Allow to cool about 5 minutes. Under cold running water, crack and peel shell from boiled eggs and set eggs on separate plate or in a bowl. Slice eggs long-ways from top of egg to bottom. Remove yolks into separate bowl. Set sliced whites aside on a plate or serving plate.
  • Add mayonnaise and mustard to yolks at about 1 tsp. at a time and mix until creamy. Mayonnaise should end up 1 tsp. less than mustard when finished.
  • Spoon when creamy onto egg white halves and sprinkle with cayenne pepper.

Special Equipment Needed


I use 4 tsp. of mustard and 3 tsp. of mayonnaise when I make these. The mustard adds a tart flavor and the mayonnaise balances it out.
