  • 1. Put oil in a large, heavy pan with high sides and heat to 375°F or use a deep fryer. Line a large baking sheet with paper towels.
  • 2. While the oil is heating, separate the onion slices into rings. Stir together the flour, cayenne pepper, paprika and salt in a medium bowl, then stir in the beer.
  • 3. When oil is hot, add a handful of the onion rings to the batter and toss to evenly coat. Let excess batter drip off, and then gently add them to the oil. Fry until lightly browned and crisp, 1-2 minutes. Scoop out with a slotted spoon to the tray and repeat with remaining onion rings. Serve warm.
