  • Cook spinach according to package directions. Drain and reserve the vegetable fluids.
  • Melt butter in a large pot over low heat. Add flour, stirring until blended and smooth, but not brown. Add onion and cook until soft but not brown.
  • Add liquids slowly, stirring constantly to avoid lumps. Continue stirring until cooked to a smooth and thick consistency. Add seasonings and diced cheeses. Stir until cheese is melted. Add cooked spinach and mix well.

This is spinach au gratin casserole with a kick! This may be served immediately, or placed in a casserole, topped with buttered Italian breadcrumbs and baked until bubbly. The flavor is improved if the latter is done and if the casserole is then refrigerated overnight. This dish also freezes very well and is easily doubled. This recipe has become a traditional family favorite. Everyone who tries it in our household asks for the recipe!
