  • 1. Preheat oven to 375 degrees F. Clean chicken of all fat and sprinkle the season salt. Place the chicken in a casserole pan and cover in foil. Place the chicken in the oven for 1 hour.
  • 2. At the half hour mark start chopping the spinach, taking off the stem (I like to use spinach that is also used as a salad). Sauté the mushrooms in one tablespoon of butter on medium heat, then pour it into a bowl. Sauté the spinach with the remaining butter, until they appear as if they are wilted. When you are done pour it into the same bowl as the mushrooms and mix the both of them together. By this time the chicken should be done.
  • 3. Take the chicken out and put it on the plate right away, so that you can start putting it together. Pour the spinach mushroom mix on top, pour as much as you would like. After you have done this put the slice of cheese on top immediately so that is starts to melt.
