  • For the mushrooms:
  • Wash and remove stems from mushrooms. Blanch mushrooms in boiling water for around 1 min. Remove from the heat and place in a strainer.
  • Spinach mix:
  • Chop the onion, garlic and leftover mushroom stems and saute in the olive oil, wine, butter and herbs. Add the frozen spinach.
  • Cook the Stove Top Stuffing replacing the water with the chicken broth according to the directions on the back. Mix the spinach mix and Stove Top Stuffing together. This is the time to check the mix to see if you need any additional spices. Fill the mushrooms with the mixture.
  • Cook on 400 degrees F for 20 min. After you take them out of the oven switch your oven to broil then top them with a dollop of the herbed goat cheese. Put them under the broiler for about a min. Keep an eye on them for the entire time!! Serve and enjoy!!
