  • Add oil or PAM spray to a nonstick skillet. On medium to high heat, brown ground turkey. Add seasonings: sage, red pepper flakes, salt and black pepper. While the meat is browning, add the frozen spinach -- the turkey will absorb the moisture.
  • Beat the 4 eggs in a bowl. Reduce the heat to medium- high. Pour the eggs on top of the turkey and spinach and use a spatula or wooden utensil to form eggs.
  • Remove skillet from heat and add the parmesan or American cheese.


For a crispy topping of cheese use a oven proof skillet or dish and place in the broiler on 475°F for 5 minutes. For Vegans replace the ground turkey with mushrooms and drain the spinach.
