I made this up one day as a poor college student who was trying to use up the food in her refrigerator, and have gotten all kinds of favorable comments on it. Most people don't mix their sauces, but it is delicious in this recipe.
To mix it up, you can add ricotta or mozzarella or any combination of cheeses in between the layers. For a healthier recipe, you can substitute the beef with ground chicken or turkey.
Also if you'd prefer fresh spinach, cook it on low heat first to wilt the leaves so they will mix better in the beef mixture. Add more/less garlic to your taste. Personally I love it, so I pile it on!!
