  • Heat oven to 375 F. Grease a shallow 2 1/2- to 3-qt. baking dish. Halve squashes, scoop out seeds, & peel. Cut into 1/2-in. slices. Rinse leeks in a colander; drain. Mix salt & pepper in a cup. Heat butter in a large skillet over med. heat; add leeks & 1/4 tsp. salt mixture. Cook 5 min. until soft. Stir in carrots; cook 5 minutes longer.
  • Arrange 1/3 of the squash in the baking dish; sprinkle with 1/3 of the remaining salt mixture. Top with half of the kale, 3/4 cup Gruyere cheese, half of the carrot mixture, & 3 Tbsp. parmesan cheese. Repeat layers once. Top with remaining squash. Pour broth over all & sprinkle with remaining salt mixture.
  • Cover with foil & bake 45 minutes. Uncover, sprinkle with remaining parmesan cheese & bake 15 minutes longer or until veggies are tender. Let stand 15 minutes before serving.

Notes

Microwave squash just until soft enough to cut easily.
