  • PUFFS
  • In a 2qt. sauce pan, bring water and butter to a full boil. Stir in flour over low heat, stirring vigorously until mixture forms a ball. Remove from heat; add eggs one at a time beating between each until smooth.
  • Drop about 1/4 cup of dough 3 inches apart onto a cookie sheet. Bake at 400 deg. for 35 - 40 minutes or until golden brown. Bake completely - DO NOT UNDER BAKE.
  • CREAM FILLING
  • Beat whipping cream until soft peaks form, continue beating while adding 1/2 cup of powdered sugar, beat until stiff peaks form. Set aside
  • Beat together cream cheese, 2 Tbsp. of preserves, and vanilla; beat until smooth and creamy. Add this to the whipped cream and beat until completely mixed.
  • When puffs have cooled, cut off tops and remove any filaments of soft dough. Fill puffs with cream mixture and replace tops.
  • TOPPING
  • Heat 1/2 cup of preserves and drizzle over puffs, sprinkle with powdered sugar, and top with sliced strawberries (optional).
