  • Clean and dice up fresh strawberries.
  • Combine strawberries with approx. 1/2 cup sugar (or to taste) in bowl. Stir strawberry and sugar mixture until strawberry juice and sugar combine to create a light "syrup" and mixture is somewhat pourable.
  • Put strawberry mixture in refrigerator to get a bit cold (at least under room temperature) for approx. 10 min or in freezer for no longer than 5 minutes.
  • When mixture is cool/cold, remove from refrigerator. Take ice cream sandwiches out of freezer. Place them, 1 each, on separate dessert plates. Spoon strawberry mixture over ice cream sandwich so none of the sandwich is visible. Top with COOL WHIP whipped topping, if desired. Serve.

We call it "Strawberry Surprise" because what you think is just a plate of sweet and pretty red strawberries also has a very pleasant surprise hidden underneath. The contrasting colors of the white (vanilla ice cream), dark brown (chocolate cookie) and bright red (strawberries) makes this dessert pretty even while you are in the middle of devouring it; making it a great idea for gatherings of all kinds. But, it's so simple and fast to make that we often will make a bowl full of strawberry topping and then leave it in the fridge. That way, whenever someone gets a hankering for something sweet they can grab an ice cream sandwich from the freezer and make their own "Strawberry Surprise" anytime.
