  • Place the water in a small bowl and sprinkle the gelatin over the top. Let stand until softened.
  • Combine the milk and brown sugar in a large pot to prevent boiling over. Bring to a boil, and add the gelatin and remove from the heat. Stir until the gelatin dissolves.
  • Place the yogurt and vanilla in a large bowl and whisk in the milk mixture.
  • Pour evenly into 6 (4 ounce) ramekins, dessert dishes or wine glasses. If using ramekins, unmold onto servings dishes. Garnish with fruit. Chill for around 4 hours.


The original recipe called for cream rather than milk. But to improve the health benefit, I changed it to milk. This works very well. The original recipe called for 2 1/2 tablespoons of gelatin but to avoid the extra measuring I used a full envelope. It turned out very well.
