  • Preheat oven to 400°F. Grease shallow baking dish with butter. Slice artichokes in half, lengthwise (including stem). Remove choke. Place artichoke halves, heart side up, in prepared pan. Season with salt & pepper.
  • In mixing bowl, combine ricotta, egg, pecorino, salami & parsley. Mix well. Season with salt & pepper. Fill the cavity of each artichoke with the cheese mixture.
  • In a small bowl, combine oil and breadcrumbs. Mix well. Season with salt & pepper. Sprinkle bread crumb mixture over cheese mixture, pressing crumbs firmly into the cheese. Drizzle artichokes with melted butter.
  • Place in oven on top rack & bake till golden, about 15 - 20 minutes. Remove from oven & serve hot. Garnish with parsley.
