If you don't mind extra calories: Roll in flour and egg and fry the chicken logs up then put in baking dish. Bake for only 15 minutes to melt the cheese.
-OR- After putting in the baking dish and adding seasonings, put a pat of butter on each chicken then the additional piece of cheese.
I vary the cheese from cheddar to mozzarella. Just about any sliceable cheese works well.
If the stuffing looks to dry, just add a couple of tsp. chicken broth to the mixture before filling the chicken.
