  • a. Prepare Stove Top Stuffing according to box instructions. (I use the microwave instructions.)
  • b. Pound chicken breast to 1/2 inch thickness.
  • 1. Preheat oven to 350°F. Lay chicken out flat and layer a piece of provolone and approximately 1 heaping tablespoon of stuffing mix on the chicken. Roll chicken into a log and insert a toothpick to hold in place. Repeat with the remaining chicken.
  • 2. Lay in baking dish next to each other. Pour chicken broth/stock over the chicken in the dish. Sprinkle garlic, salt and pepper over chicken to taste, approximately 1 Tbsp. of each. Lay another piece of cheese over each piece of chicken on the outside.
  • 3. Bake for approximately 35-40 minutes.


If you don't mind extra calories: Roll in flour and egg and fry the chicken logs up then put in baking dish. Bake for only 15 minutes to melt the cheese. -OR- After putting in the baking dish and adding seasonings, put a pat of butter on each chicken then the additional piece of cheese. I vary the cheese from cheddar to mozzarella. Just about any sliceable cheese works well. If the stuffing looks to dry, just add a couple of tsp. chicken broth to the mixture before filling the chicken.
