  • 1. Preheat oven to 350.
  • 2. Immerse lobsters in boiling water seasoned with ½ Tbsp Old Bay for 5-7 minutes at a rolling boil. Drain water and let cool (you can pick up lobsters with your hand).
  • 3. Sauté celery, onion, scallops, shrimp, ½ Tbsp Old Bay and crab meat in butter. When onions are clear, add sherry, stir and let set for 2 minutes. Strain mixture to release excess liquid.
  • 4. While this mixture is draining, place lobsters belly side up on a cutting board. Cut them down the middle with a sharp knife or cooking scissors, (meat maybe translucent in center), open them flat, leaving the meat intact.
  • 5. Place lobster (belly-side down) in a shallow baking dish
  • 6. Remove the stuffing mixture from the strainer to a glass bowl, add 2 Tbsp. cracker meal, mayonnaise, mustard and stir gently until well mixed. Mound filling on each lobster shell. Sprinkle remaining cracker meal over the tops.
  • 7. Bake on middle rung for 5-7 minutes in preheated oven or until golden brown.
