  • Cut and quarter the large zucchinis or cut lengthwise the small ones. Par boil squash until fork tender.
  • Cool squash and scoop out insides leaving a hollow but sturdy boat. Mix squash, ground beef, egg, diced onion and the smashed crackers.
  • Stuff the boats and cook until meat is done - about 40 minutes - in regular oven at 350°F. Top with cheese and let melt.

Special Equipment Needed


Bread crumbs of any flavor can be used instead of crackers- use about a cup or more to bind the mixture nicely. Try to find the largest possible over grown fresh squash. If you do not want to heat the oven I use a small convection oven or my personal favorite kitchen appliance the Flavor wave halogen oven. Just watch your time It takes only 30 minutes in the Flavor wave and 30 in convection--just make sure it is cooked and not over cooked.
