  • Cut zucchini in half lengthwise, remove flesh and chop into 1/2 inch pieces. Place "boats" of zucchini in large baking dish with sides.
  • In large skillet over med-high heat, saute sausage until cooked, add zucchini flesh and cook until soft. Deglaze pan with 1/2 cup wine. Remove from heat. Stir in bread crumbs, corn, cheese and mushroom soup. Place sausage stuffing into hollowed zucchini. Pour remaining wine into pan so bottom is not dry.
  • Bake at 375 degrees F for about 45 minutes.

Notes

This is a great way to cook those super huge, over ripe zucchini from the garden without being bothered by toughness or too many seeds.
