  • When I cut the chicken into bite size pieces I cut the thickest part of the breast in half so that my chicken pieces are approximately the same thickness so that they cook about the same time. Put chicken pieces into a large bowl and pour hot sauce over them. Mix well till covered with hot sauce.
  • Use enough oil to just cover the bottom of the pan to about 1/4 of an inch deep and heat till a drop of water dances in the pan.
  • Using a fork (to keep the hot sauce off your hands and out of your eyes) dredge the chickens pieces in the flour and fry in pan till just well browned, flip brown on other side and place on plate in warmed oven until all of the chicken is done.

Notes

Great served hot or cold for a snack. I love this served with boiled red potatoes and a side of Breakstone Cottage Cheese. It's mild enough that my two year old grandson loves it. It's quick, easy and absolutley delicious.
