  • Preheat your oven to 325°F. Take a 13x9 inch glass baking dish or any fair sized casserole dish and spray lightly with cooking oil spray.
  • Slice all vegetables and set aside in a large mixing bowl, adding oregano, salt, pepper, cilantro, and olive oil. Mix all together thoroughly.
  • Then layer tomatoes, zucchini, and onions row by row until dish is full.
  • Place in oven for 35 - 40 minutes. When tender and slightly browned on top, add cheese mixture and place back in oven for 10 - 15 minutes more until top has slightly browned also. Serve as a side dish or main course if you like.


Do not peel the green rind on the zucchini; they will become too tender and do not add water to the pan. You may cover the pan with foil if you like to prevent vegetables from slicking.
