  • In a large bowl, place chicken breasts and cover with half the bottle of salad dressing. Lightly salt and pepper. Place in refrigerator, to marinade, for one hour.
  • Place sliced vegetables in separate bowl, cover with remaining salad dressing. Lightly salt and pepper, and give three or four good stirs. Place in refrigerator. Stir two or three times during the hour. (Chicken and vegetables can marinate as long as you need, even all day if necessary.)
  • Preheat oven to 350 degrees. Place chicken breasts in 9-inch by 12-inch baking dish. Add pepper to your liking. Discard marinade! Pour vegetables and marinade over chicken. Cover with tinfoil. Cook for 45 minutes. Remove foil and cook for 10 minutes more. Serve over a bed of rice, or with baked sweet potatoes on the side.

A friend gave us a BAG of squash and zucchini they grew in their garden. What to do, I thought. So I took our favorite meat, and our favorite marinade, and concocted "Summer Chicken." My husband loves it! But even better, so do my kids! The Italian dressing adds a flavor to the squash and zuchini that makes them less vegetable-like! A few weeks ago my parents came to dinner, and this is what I served. Now my mom is serving it in her home! Its very easy to double, if you want to serve more people. It can even be done on the grill (in foil packets), to keep the heat from swamping your home!
