  • Prepare macaroni according to package instructions; drain & rinse with cold water until macaroni is cool.
  • Chop celery, onion, pepper & pickles while macaroni is cooking. Mix together with pickle juice, tuna, olives & mayonnaise or salad dressing is a large bowl.
  • Add macaroni & toss lightly. Chill if desired before serving. Keeps well in the refrigerator for up to 3 days & tastes better after chilling at least 2 hours.

My husband & I spend every Saturday morning working in the yard. This salad is really refreshing when we're hot & tired. I usually prepare it a day or so ahead of time, so it will be ready for lunch after we've finished the yard work. One substitution that I make sometimes is to use seedless green grapes instead of the pickles. I also use diced cooked chicken in place of the tuna for a change of taste.
