  • 1. Beat eggs, half-and-half, salt and pepper, and garlic seasoning with a whisk until well blended and frothy.
  • 2. Heat a nonstick omelet pan sprayed with olive oil spray over medium heat. Pour egg mixture into omelet pan and using a spatula, lift the edge of the eggs as they cook, tilting the pan to allow the uncooked eggs to move to the outer edge of the omelet, and moving in the cooked edge toward the center of the omelet.
  • 3. When the eggs are just about set, layer spinach leaves over half of the omelet and sprinkle with salt and pepper to taste and add the oregano. Sprinkle the mozzarella over the top of the spinach. With your spatula, carefully fold over the omelet onto the spinach.
  • 4. Reduce heat and cook for about a minute. Using your spatula, divide the omelet in half crosswise and carefully flip over each half with your spatula and continue cooking for another minute or until the eggs are complete set and the spinach is slighly wilted.
  • Plate and serve with fresh sliced tomatoes, if desired.

Notes

This is one of my husband's breakfast favorites for a Saturday morning. I like it because it's so easy and quick, not to mention super delicious and nutritious.
