  • Combine cream cheese, sugar & egg, mixing until well blended. Set aside.
  • Combine dry ingredients. Add combined oil and eggs, mixing until moistened. Fold in carrots and nuts/raisins. Reserve 2 cups of batter.
  • Pour remaining batter into a 9-inch Bundt pan. Pour cream cheese mixture over batter. Carefully spoon reserved batter over cream mixture, spreading to cover.
  • Bake at 350 degrees F for 55 minutes or until wooden toothpick comes out clean. Cool in pan 10 minutes sprinkle with power sugar, if desired.


I substitute raisins for the nuts.

Rated 5 out of 5 by from Surprise Carrot Cake I found this recipe several years ago in a Philadelphia Recipe book and have made it several times. There is no way you can make a mistake with this recipe. It comes out wonderful every time (Just as long as you follow directions). I have also doubled the cheese filling. All you do is bake at 425 degrees for 12 minutes then lower to suggested time for remaining baking time. I also add nuts AND yellow raisins . Your cake will come out moist every time.
