  • Poach chicken in boiling water until done, approx. 20 minutes; drain and cool.
  • While chicken is cooling, small dice celery and pepper, slice scallion Chinese cut (on angle), place in large bowl. Drain mandarin oranges and pineapples, add to bowl.
  • Large dice chicken, add to bowl, add raisins, almonds, salt and pepper, and mayo. Gently mix all ingredients together.


Serve immediately as sandwiches on your favorite bread or on a bed of baby spinach or romaine lettuce garnish with cantaloupe, or prepare ahead for a luncheon or picnic refrigerate up to 2 days. I named this salad after a dear friend who I would prepare for on occasion.
