  • Combine sugar, oil and eggs. Beat at medium speed for two minutes. Sift dry ingredients together. Add to oil mixture and beat on low speed for one minute. Add grated carrots and nuts.
  • Pour batter into a greased and floured Bundt pan.
  • Bake at 300 degrees F for one hour or till done. Cool completely and frost.
  • Frosting: Warm cream cheese and butter to room temp. Beat them together. Add vanilla. Gradually beat in powdered sugar. Frost cake and enjoy.

Notes

Raisins and/or well drained crushed pineapple may be added.
