  • Cook pasta according to package directions. Do not overcook. Rinse with cold water when done.
  • Cut up vegatables and mozzarella. Put into a large bowl. Don't forget the olives!
  • Add pasta and the Italian dressing to the veggie mix. Stir very well. Let it marinate a good 4 hours or so before serving to let it absorb the most flavor.


This is definitely a "make it the night before" type dish. I recommend cutting the baby carrots and cherry tomatoes in half (easier to eat AND to soak up the marinade). But other than that, I do prefer larger "chunks" of veggies. Leave the olives whole. The end product should be a pretty equal balance of 1/2 pasta, 1/2 vegetables.
