  • 1. In a large sauce pan add 4 cups water and bring to a boil. Once boiling, add Jasmine rice, stir, cover, reduce heat to low and let cook for 15-20 minutes or until fluffy. NOTE: Jasmine rice is offered in quick cooking versions; check your local market for their selections. Always be sure to read/double check instructions.
  • 2. Peel and thinly slice mangos (discard the large pit in the middle).
  • 3. Heat a medium size non-stick skillet on med-high heat; add thinly sliced mangos once pan is heated.
  • 4. Saute mangos and sugar for approximately one minute or until slightly softened and then add the sweet chili sauce and the soy sauce; stir, being sure to mix the ingredients thoroughly.
  • 5. Once mixed, reduce heat to med-low and let simmer, uncovered, for 8-10 minutes or until soft.
  • 6. Salt and pepper to taste.
  • 7. Serve Sweet Chili Fried Mangos atop the Jasmine Rice.
