  • 1. Preheat oven to 350 degrees F and mix all dry ingredients. Add remaining ingredients and mix well.
  • 2. Pour into greased cupcake pans or mini loaf pans.
  • 3. Bake 20 min or until golden brown on top and a toothpick inserted in the middle comes out clean. Allow to cool slightly in the pan (until pulls away from side a bit). Remove from pan serve warm.


You may also add a can of creamed corn. You can also use a 13 by 9 inch pan. 10 min prep and 20-30 min cooking time depending on what size pan you use.

I used both Jiffy corn mix and cake mix and the bread still had a nice cornbread texture with a little added sweetness that was perfect with a spicy chili. I don't recommend using this for muffins, as they cooked too fast to allow ample rising time, but the recipe made six very nice mini-loaves.
