  • Mix all ingredients for batter and set aside. Heat carrots and water to boiling. Cover and cook until tender, about 8 to 10 minutes. Pat fish dry with paper towels and set aside.
  • Mix brown sugar, vinegar, cornstarch, and soy sauce into saucepan. Stir in carrots and water, pineapple chunks and its syrup, and green pepper. Heat to boiling, stir constantly. Boil and stir for 1 minute. Keep warm.
  • Heat oil (about 1 to 1/2 inches in frying pan) to about 360°F. Dip fish into batter and allow excess batter to drip off. Fry about 7 to 8 pieces at a time until golden brown about 1 minute on each side. Drain on paper towels. Arrange fish on a platter and pour sauce over fish. Enjoy.


My footnote on this recipe is Great. Also I have fixed the fish alone without the sauce, I love it both ways.
