Traditionally, a tagine is a Moroccan stew featuring lamb gently simmered with vegetables and other flavorful ingredients. Tagines are served with couscous, as in this recipe, but rice pilaf also makes a delicious accompaniment.
TIP: This is an ideal meal for which to make extra portions. Freeze the leftovers in single-serving containers for rushed nights.
