  • Cut chicken breasts into small pieces, and then marinate the chicken in half the bottle of Italian dressing for a day.
  • Cut the green peppers and the onions into small pieces. When ready, drain chicken from dressing then brown the chicken in the other half of the dressing. After browned, add in peppers and the onions. Simmer till peppers and onions are soft.
  • While simmering, brown tortilla shells, when ready lay down on baking sheet (I use cookie sheets). On tortilla shell, add chicken peppers, onions, dressing, and shredded cheese. Cover with another shell and put in the oven on lowest temperature for about 5-7 minutes. Then sprinkle cheese on top of the top shell, and put back in oven till the cheese is melted (about 3 minutes).

Special Equipment Needed


I eat mine with ranch dressing and salsa but you can use sour cream as well. I serve mine whole. I don't try to cut mine into triangles or anything. Give your guests a whole quesadilla and let them cut it themselves. It saves you time and allows you to enjoy yours while it is hot.
