  • Rinse fish and pat with paper towel. Place in bowl, sprinkle salt and curry evenly on salmon. Mix sauce and set aside.
  • In a large frying pan heat 1 Tbsp. oil. Place fish gently in pan and cook 2 minutes on each side. Remove salmon and place on paper towels.
  • Add remaining oil, stir in onions and cook 1 minute, add garlic, cook 30 seconds, stir in sauce, simmer 5 minutes, return salmon to pan and simmer 5 minutes, remove from heat and serve with rice.

Notes

The sweet and tangy taste, enhances the salmon. Serve with rice, noodles or roti.
