  • Saute garlic and red pepper flakes in olive oil for 4 to 5 minutes on medium low. Add tomato sauce, continue cooking on medium for about 10 minutes.
  • Cook pasta at this time (while waiting for tomato sauce to reduce down) according to package directions (do not forget to salt the water).
  • Add the red wine vinegar and red wine if desired. Continue reducing to desired liquid consistency.

Special Equipment Needed


The longer it cooks, the thicker the sauce becomes. I like using rotini pasta best because the minced garlic gets stuck in the spirals and you have garlic in every bite! But you may always use any kind of pasta.
