  • Brown ground beef with taco seasoning, 1/2 of light beer, and taste of seasonings. Bake chicken breast with remaining light beer and seasonings until almost completely cooked. Cube/dice chicken breast. Mix chicken and ground beef together.
  • Fill each tortilla with shredded cheese and meat combination and roll up. Place each enchilada in a 13x9 glass baking dish. Cover enchiladas with remaining cheese and enchilada sauce. Sprinkle seasonings to taste.
  • Bake at 325°F for 12-15 minutes or until cheese is melted and chicken is done. Serve and enjoy!


Substitutions: Any meat choice can be used (for example: shrimp, beef only, chicken only, pork, etc). Enchilada sauce can be substituted for sour cream sauce, chipotle ranch, queso, or chili.
