  • Cut bacon into cubes. Fry in large frying pan until crisp. Remove bacon from pan. Drain fat from pan, leaving a little in pan for frying potatoes. While pan is still hot, add butter and a little olive oil to hot pan. Put in potatoes and add salt and pepper to taste. Fry potatoes till golden brown.
  • In bowl whisk eggs, parsley, garlic powder, salt and pepper, and a little water. Add egg mixture over potatoes. Fry until bottom has a brown crust on. Do not flip egg mixture in frying pan. While frying egg mixture, move egg mixture on side of pan to center of pan. This will let the loose egg mixture go into the frying pan. Repeat this method around all sides of frying pan until most of loose egg mixture has been fried in pan.
  • On top of egg mixture, add crumpled bacon. Add cheese over top of bacon, and parsley over cheese. Continue cooking until cheese has been slightly melted.
