  • Preheat oven to 350 F. Grease an 8 x 8 baking dish and set aside. Combine first 3 ingredients together in a bowl, cover with plastic wrap and refrigerate until ready to use.
  • Spray frying pan with non stick cooking spray. Add chicken or turkey and season with the spices. As your cooking, chicken and turkey have a tendency to clump together so break apart larger pieces with your spatula. When all meat is no longer pink, drain in a colander and transfer to a larger bowl. Using a rubber spatula, add chipotle, cheese, sour cream mixture to meat and mix until well incorporated (making sure cheese is not stuck together in big clumps).
  • Heat 2 or 3 tortillas at a time in microwave 30 seconds or until soft and pliable. Fill tortillas with scant 1 cup of filling and roll up - jelly roll fashion. Continue in same manner until all tortillas are used (it's ok if you dish looks really full). Pour enchilada sauce over the top and top with shredded Velveeta Pepper Jack.
  • Bake at 350 for 25 minutes then broil (watching carefully) for approx 5 minutes till bubbly.
