  • Crush vanilla wafers. Reserve and set aside 1/4 of the crumbs. Spread remaining crumbs evenly in an approximately 8 x11-inch serving dish.
  • Beat butter until creamy. Add powdered sugar and beat until smooth. Add eggs 1 at a time and beat in. With a spoon, distribute the mixture gently by spoonfuls over the vanilla wafer crumbs in the serving dish. (Wait to SPREAD the butter/powdered sugar/egg mixture until all of it has been spooned into the serving dish.) Spoon the raspberries over the creamy mixture and top with the whipped cream. Sprinkle reserved wafer crumbs over the whipped cream.
  • Refrigerate 12 hours or overnight.

Special Equipment Needed


You may sweeten the raspberries and the whipped cream if you desire.
