  • Run water over frozen broccoli in a strainer until it starts to thaw; drain any water.
  • Melt the stick of butter in a soup pot. Chop onion and cook with stick of butter until soft around 3 minutes, Add flour and cook around 3 minutes. Slowly stir in the chicken stock and cook 3 minutes.
  • Add the large container of heavy cream slowly while stirring. If it gets too thick, add the second small container of heavy cream later. It will thicken when you add the cheese and noodles. Add the thawed broccoli to the soup and cook 3 minutes. Add Velveeta cheese in small chunk, stir and cook 3 minutes. Add the noodles and simmer until it gets nice and thick, 5 minutes. Serve with crusty bread.
