  • CRUST - Preheat oven to 375°F. Bring to boil water and butter, remove from heat. Gradually beat in flour. Add eggs one at a time, beating in quickly. Spread on greased 9 by 13" baking pan. Bake 25 minutes. Let cool while making filling.
  • FILLING - stir cream cheese and pudding powder together as best you can. Add milk gradually with hand held beater (if you have them). It's okay if you mix with wire whisk by hand. May not get as smooth. Spread/pour on cooled crust. Top with Cool Whip as carefully as you can without mixing the two. Drizzle with fudge.
  • FUDGE DRIZZLE - Heat sugar, butter and milk in pan and boil for 2 minutes. Remove from heat and stir in chocolate until smooth. Allow to cool for a little while so it doesn't melt the whipped cream. I like to make this while the crust is baking.

I know this sounds very complicated, but after you do it once, it's easy. If you do decide to make this, I promise it will be a hit for all!! Not too rich so we serve them in large pieces!!! Every time we go to a family function, everyone asks me to BRING THE ECLAIRS!!!!
