  • Rub roast with salt & pepper. Place fat side down (if using a cut like that).
  • Cover and roast at 350°F until you smell it browning. Turn roast a few times. DO NOT ADD WATER yet!
  • When juices have browned to your liking, remove roast, cover and rest it. Add all but 1/2 cup water. Stir to get all the goodies off bottom.
  • Mix your gravy thickener with remaining cold water and add to broth you made from the goodies. Stir till thick.

Special Equipment Needed


The roast will make own juice then cook down and brown on bottom of pan. After stirring-up the goodies I then strain for a smoother gravy. I make 'perfect' mashed potatoes and peas to go with this. (I am the only one liking peas here.) I do not have a photo as of yet but when I do I'll send it.
