  • Scrub and peel potatoes. Slice and dice the potatoes for boiling. In large saucepan 2/3 full with water (the water should just cover the potatoes), boil the potatoes until soft. I like to test the potatoes by sticking a piece of potato with a fork and if it slides off the fork, they are ready. Drain the potatoes.
  • Place the potatoes in a bowl that you can either mash them easily or use your mixer on them easily. Add your butter, onion, and garlic and begin mashing / mixing.
  • Slowly add the stock...continue mashing and mixing. Add the salt and pepper. Mix the potatoes, then add 1/2 the amount of your parmesan cheese.
  • When the potatoes are almost to the consistency you and your family enjoy most, add the remainder of the parmesan. Give it a final mash/mix or two, and you have the perfect potatoes for any meat dish!


I came up with these potatoes one day when I was making dinner and realized I had no milk to finish making mashed potatoes the traditional way! So, I improvised, and it turned out that my husband and son both absolutely loved them!!!! I hope you and yours will, too!
