  • Place potatoes in a 2 qt. pot of boiling water and cook until they can break apart by fork easily, but are not mush. Meanwhile, dice onion and bacon. Place the bacon in a non-stick skillet and once the "drippings" start to come out, add onion and cook until the bacon is crisp.
  • Drain the potatoes and place back in the pot. Combine the finished onion/bacon mixture and stir. Add evaporated milk, half-and-half, milk, cream corn, drained cans of corn, butter, salt and pepper. Heat mixture through making sure to stir occasionally.
  • Combine water and cornstarch in a measuring cup and stir till the cornstarch is dissolved. Once the butter has completely melted into the chowder then add the cornstarch mixture and give a good stir. Shut the heat off and leave to cool for about 10 minutes. Stir again and then serve.


By using potatoes and bacon that are already par-cooked it saves on SO much cooking time! The pre-cooked bacon also saves on the fat content of this recipe as well because there is usually such minimal grease. I constantly hear "when are you going to make me chowder" and when I do they pack into the house!! My best client though is my 5 yr old son who LOVES it when mommy makes Corn Chowder as he loves corn!
