  • Peel and cube potatoes. Cover with water in a medium sauce pan and boil until tender. While the potatoes are boiling, make a rue by melting one stick of margarine in a large soup pot. Add the minced onion and saute until the onion is tender and translucent. Add the flour and allow to cook for 3 to 4 minutes. Using a whisk, stir in the milk. Continue to stir every few minutes until mixture begins to thicken. When the potatoes are tender, drain and add to the milk mixture. Stir in the seasonings and cheese. Heat until soup is bubbly and thick. When serving top with addition grated cheese and crumbled bacon.

Special Equipment Needed


This is a wonderful winter recipe. My kids love it and like to put their own cheese and bacon on top. I usually serve it with garlic toast.
