  • Preheat oven to 350°F. Prepare turkey breast by running under cold water and patting dry. Salt and pepper the cavity on the underside of the breast. Cut lemon in half and stuff in cavity with sprigs of thyme.
  • Turn the bird over and place in a roasting pan on a rack. Pour enough white wine into the roasting pan to cover the bottom of the pan. Brush melted butter over exterior of breast, sprinkle with salt and pepper and some fresh thyme leaves. Put the breast in the oven for 30 minutes.
  • Mix veggies with olive oil, salt and pepper to taste, and thyme sprigs. Add veggies to roasting pan and cook for another 90 - 120 minutes, or until interior temp of the meat is 170-175 degrees F. Remove from oven, and let bird stand for 15 minutes prior to serving.

I like to serve this dish with stuffing, gravy and a nice green salad. Turkey does not have to be a difficult meal to make. This dish is easy and there is very little prep work to do. Enjoy!
