  • Preheat oven to 350 degrees F.
  • Ricotta-style filling: Mash tofu completely. Mix in lemon juice, honey or sugar, salt, oil, basil, garlic powder and onion powder.
  • Spray 9 x 13 pan. Start making layers in pan, starting with a thin layer of pasta sauce, then a layer of uncooked noodles, then a layer of half of the ricotta-style filling, then a small sprinkling of vegan mozzarella cheese. Continue in the same order, using half the remaining tomato sauce and noodles, the rest of the tofu mixture, and small amount of cheese. Finish with a final layer of the uncooked noodles, pasta sauce and sprinkle top with cheese.
  • Cover and bake for 60 minutes or until noodles are done.
