  • Dice squash and green peppers. Mince garlic very finely. In a small pan, fry squash, green peppers, and garlic in 1 Tbsp. of the olive oil with cumin and chili pepper until brown on edges. Chop spinach very finely. Mix the fried bit in a large bowl with chopped spinach, beans, and 2 cups of cheese.
  • Preheat a skillet to medium-high. Add one Tbsp. olive oil, place one tortilla in pan with oil. Quickly place a small handful of cheese on one half of the tortilla. Place one really big spoonful (1/6th) of the bean/veggie/cheese mixture ontop of the cheese. Fold the empty portion of the tortilla over, and squish down with a spatula. Fry on both sides until lightly brown. Repeat assembly for all 6 tortillas. Serve with salsa if you want, but it's good on its own.


Make sure you use refried black beans. Refried pintos just don't work as good here. This is a great meal when you're tired of eating meat all the time. Reheats well.
