  • Let cream cheese come to room temperature to soften. Follow the directions on the package of ranch dressing to prepare.
  • Then to the ranch dressing add the cream cheese, pimentos*, green pepper, green onions, and black olives. (* If you want you could add chopped sweet red peppers because that is what pimentos are and all I could find was a teeny tiny jar so that's what I did.). Let chill in refrigerator for 30 minutes or more-- mixture will thicken.
  • Follow directions on the package of tortillas then spread a couple of tablespoons of the mixture on each tortilla and roll. You can judge how much or little you want to use. Can be cut into 1 inch pieces or ate whole. Refrigerate unused mixture.

My 5 year old loves this recipe! We eat them for a quick meal when it's so hot out that you don't want to cook and for a filling snack. I got this recipe from a friend of mine who served these cut into 1 inch pieces for a birthday party. Just be sure to make them a day or two ahead of time and cover them so they don't dry out. I've thought about adding some meat such as deli sliced turkey or dried beef. You could also use bigger or smaller tortillas. Get creative and add whatever you like! Makes a great dip also.
