My 5 year old loves this recipe! We eat them for a quick meal when it's so hot out that you don't want to cook and for a filling snack. I got this recipe from a friend of mine who served these cut into 1 inch pieces for a birthday party. Just be sure to make them a day or two ahead of time and cover them so they don't dry out. I've thought about adding some meat such as deli sliced turkey or dried beef. You could also use bigger or smaller tortillas. Get creative and add whatever you like! Makes a great dip also. Hope you enjoy it as much as we do! :)
