  • Preheat oven to 375 degrees F. Sift together the flour, cocoa powder, baking soda, and salt. Set aside. In a stand mixer’s bowl, cream together the melted butter, brown sugar, and granulated sugar on medium-high until light and fluffy (approximately 5 minutes). Add the whole egg and mix until incorporated. Then add the egg yolks, one at a time—mixing after each addition until each has been incorporated. Add the milk and vanilla. Beat for another minute. Gradually, add 1/4 of the flour mixture at a time to the butter mixture—mixing after each addition until the flour mixture is incorporated into the butter mixture. Once the flour is fully incorporated into the butter mixture, add the grated bitter-sweet chocolate and mix until it is incorporated. Add the chocolate chips and mix until the chips are incorporated into the batter.
  • Using a large tablespoon, scope the batter and shape into balls (about the size of a golf ball). Place the dough onto parchment lined cookie sheets.
  • Bake for 10-12 minutes being careful not to overcook them. When the cookies are done baking, let them cool for 1 minute then move them from the cookie sheet to a rack to finish cooling.

This cookie is for die-hard dark chocolate lovers! The dough becomes thick--it's best to use a stand mixer if available.
